Cranberry and lemon energy balls

These no-bake little balls are the ideal snack when you're on the go, after a heavy lunch when you need something small, sweet and refreshing or as a treat after a long walk or day of work. So they are perfect for literally anytime of the day and require only 5 ingredients!
I store them in the fridge in a sealed container for up to 1 week, or freeze them for up to 3 months. This way I have something healthy next to me whenever I crave something sweet!
If you have in the fridge healthy treats, you'll eat them. If you store "not so nutritious desserts", you'll eat them too. So make sure to have at hand something that gives you the proper fuel for a beautiful day!
Ingredients: (for 12 balls)
75g cashews
5 pitted dates
30g coconut flakes (which I highly recommend you to toast before to enhance the flavor)
3 tsp water
lemon juice and zest (from a half of lemon)
12 dried cranberries
Step one:
Wash and then grate the lemon (only the yellow peel, the white one is bitter). Cut it in a half and squeeze the juice from one half of the lemon.
Step two:
Place the nuts, dates, 10g out of 30g of the coconut flakes, water, juice and peel in a food processor. Pulse a few times until you no longer see big pieces. It should be a sticky dough, not too dry nor too wet.
Step three:
Take a cranberry and cover it with some of the dough using you fingers. (it should be a two small bites ball or a single larger one :) If if does not stay together, feel free to add one more teaspoon of water. Repeat the process until you have finished the mixture. This operation will include some sticky hands but I promise that it's really fun (or at least relaxing!)
Step four:
On a plate, pour the rest of coconut flakes (20g). Roll each ball in flakes until they are all well covered. Let cool and enjoy!
