Healthy snickers cake

I don't know about you, but I surely was a huuuge snickers fan! Now that I try to reduce my refined sugar intake, I had to think of a healthier version for my guilty pleasure.. And for sure.. I found it!


It is so incredible how you can naturally sweeten your desserts with dates, without even noticing that is a healthy treat! But remember, just because it's healthy it doesn't mean that it's also low in calories :)) All those peanuts, chocolate and peanut butter... ahh I'm literally drooling just writing this. It's so worth giving it a try even if you are not a big peanuts lover, I promise!



Ingredients:

For the base:

70g oats

10 pitted dates

50ml coffee

a pinch of salt


For the ice cream filling:

300ml canned coconut milk

50g peanut butter

25g coconut sugar


For the chocolate glaze:

30g dark chocolate

50ml coconut milk


Lots of peanutsss






Step one:

In a food processor, blend your oats with the dates. Add a tablespoon of coffee at a time, in order to obtain a sticky dough. In a lined tray, press it with the bottom of a glass or simply using your hands until it evenly covers the tray. Let cool.


Step two:

In a small saucepan, heat the coconut milk with the peanut butter and sugar. Let it boil for a couple of minutes. Add the pinch of salt and pour it over the base. Sprinkle some peanuts (as many as your soul desires :) and let cool.


Step three:

In the same saucepan melt the chocolate with the coconut milk. Adding coconut milk won't let the chocolate harden too much, so you shouldn't skip this ingredient. Pour it over the cake and pop it the freezer for a couple of hours.



Tip:

Let the cake defrost on the countertop for at least 15 minutes. It is way easier to eat and your teeth won't hurt that much... Plus, when it melts it looks like a caramel is leaking out of the cake which makes it extra dreamy!!
