Nutritious pancakes

As their name says "Pan-Cake" is a cake cooked in a pan, so you basically feel like it's your birthday or a celebration every time you eat them... :)
When you think of pancakes you probably have in mind some fluffy, moist and sweet little clouds of joy. Let me assure you that all of the requirements will be checked in this version too! The only difference is that your body will feel 10 times more energetic afterwards and fuller for a longer period of time!
Ingredients:
(for about 15 medium pancakes or enough for 3 persons)
1 egg
1 ripe banana
160ml plant milk (almond, soy, oat, even whole milk works)
3 tsp ground flaxseeds (for some extra fibers that help with your digestion which have a very neutral taste don't worry :)
25g cup vanilla protein powder
60g rolled oats
1/2 tsp baking powder (2g)
Vanilla extract
A pinch of salt
Some coconut oil to grease your pan
Step one
In a food processor, blend the oats until you get a flour (you can directly use store bought oat flour for a faster version).
Pour it in a bowl and add the rest of the dry ingredients (the protein powder, baking powder, flaxseeds and the pinch of salt). Give them a stir and set aside.
Step two
In a different bowl mash the ripe banana with a fork. It really is desirable for your banana to be ripe, otherwise it's not sweet enough and you'll feel the need to add another sweetener.
Tip!
If your banana is not ripped enough, you can bake it for 15 minutes in the oven at 150. This way you will accelerate the process of relieving the gas called "ethene" that convers the starch into sugars and makes the acids disappear.
I highly recommend you to place the banana in a tray lined with baking sheet because the banana splits, leaks and you definitely don't want that juice to burn in your tray :)


Step three
Pour the milk, crack in the egg and add the vanilla extract over the banana. Combine everything well together. Incorporate the dry ingredients and mix until you have a homogenous batter. If you have time and you are not too hungry, leave the batter cool for 30 minutes, if not, that is perfectly fine,
Step four
Grease your pan with a little bit of coconut oil. When you pour a drop of your pancake batter and hear it sizzling, you know that your pan is well preheated and you can start frying your pancakes (on medium heat!).
With a spoon take some of the batter and pour it into the pan.
Don't stress too much with shaping your pancake, it will naturally take its shape. Cook it for about a minute and when you see little bubbles on top, flip it (preferable with a silicone spatula) and cook it for 45 seconds on the other side. Repeat the process until you have no batter left.
Last step: decorating
This really is a matter of preferences, the options are endless.. This is also a very good way to use the fruits that are about to spoil in your ridge or consume the opened jars!
A few of my favorite combinations:
1. Roasted nuts with honey and cottage cheese or ricotta
2. Fresh strawberries and melted chocolate
3. Yogurt/vanilla ice cream with fresh or frozen berries
4. Walnuts and sour cherries or apricot jam
5. In the picture below I went for chocolate, clementine slices, roasted walnuts, some sour cherries jam and frozen berries. YUMMINESS
