Pink salad

I have never been a fan of adding fruits in salad, but this one has radically changed my perception🤩 the sweet taste of apple combines so great with the rest of the ingredients, trust me🥰
It’s colorful, delicious, takes such a really short amount of time and it’s extremely filling (especially if you combine it with a source of protein such as hard boiled egg, turkey breast etc).
Ingredients for 4 persons:
For the base:
1 apple
2 carrots
1/2 beetroot
1/4 celery root
For the dressing
125g yogurt (3.5% fat)
Juice from 1/2 lemon
1 tbsp soy sauce
1 minced garlic clove
1 tsp mustard
2 tbsp olive oil
Salt and pepper
Extras:
50g walnuts
Salted pumpkin seeds
Pink seedless grapes
shredded brocoli
1 bard boiled egg/ person
Step one:
Wash, peel and grate all the veggie. I like to use the large side of the grater (check a photo to understand more exactly)
Step two:
In a small saucepan roast the walnuts. Roughly chop them and add them to the salad. I mentioned it at extras, but you actually can’t and don’t want to skip this ingredient!😅
Step three:
In a small jar whisk the garlic, olive oil and salt with a teaspoon.
Step four:
Add the mustard, soy sauce and lemon juice and whisk again. Incorporate the yogurt.
Step five:
You can either pour it all over the veggies or let everyone to add to his plate as much as he/ she desires.
Step six:
Add some grapes, pumpkin seeds, a hard boiled egg or even a slice of whole grain toast if you desire.
